Clean Chicken Recipe

I'm not sure about you, but I'm someone who likes to have my chicken coated in something like marinate or seasoning if I'm going to re-heat it for my lunches at work.I found this recipe in a Clean Eating Forum last year and I tried it out and have been using it ever since. The chicken tastes amazing fresh or re-heated for lunches!Ingredients1 Cup Almond Meal1 Teaspoon Ground Chilli1 Teaspoon Paprika1 Teaspoon Garlic Powder1/2 Teaspoon Thyme1/2 Teaspoon Pepper1/2 Teaspoon Salt2 Chicken BreastsOlive Oil or Coconut OilCut up your raw chicken breasts, I like to dice mine into cubeschicken1Mix all dry ingredients together in a bowl and cover your chicken in the seasoning. If you want, you can beat a raw egg and cover the chicken with the egg before you dip it int he seasoning, but I do find it works just as well without the hassle of the egg if you are in a hurry.Chickenspice1Heat up a fry pan and put in either Olive Oil or Coconut Oil and cook the chicken. Be careful when you turn it as the seasoning may come off at first.Chickencooking1Try and cook all sides of the chicken, if you are cooking larger strips you can fry each side for a minute and then place in the oven for 15 minutes at 180 Degrees Celsius.chickencooking2chickenendThis chicken is perfect to put in healthy wraps or have with vegetables. My favourites are in Summer to have it in a wholemeal wrap with some light cheese, bacon and spinach with a dijon mayonnaise (pictured below)chicken wrap2 In Winter I love to have the chicken with mashed sweet potato and vegetables like peas, corn, broccoli, carrot and cauliflower. Another thing about this recipe is that it is CLEAN!
